Translated as 'Drunk Pecorino'. This special cheese is made from sheep's milk, aged for 3 months and then covered with wine pomace (the leftover residue of wine such as pressed grapes, small pieces of stalks and yeast cells from the wine fermentation process) for another 3 months. This process gives the Pecorino Ubriaco its deep purple rind colour and rich fruity wine flavour.
